Vinification
Grape of great quality selected from noble vineyards of old
stocks over 20 years old in closely-managed plantations with low yields
per hectare. The vines undergo a delicate pruning so that the sun
penetrates to allow the optimum ripeness of the grapes. The harvest is
made manually at dawn to respect the aroma of this great grape. A cold
maceration of 5 days at 12 °C helps the extraction of color and aroma.
The alcoholic fermentation is made in small stainless-steel tanks with a
rigorous temperature control between 26 and 29 °C. In order to give an
important and noble body, a post-maceration of 14 days is made. After 12
months in French Oak barrels, the wine spends some time in tanks
before bottling.Tasting NotesIt has a handsome and intense ruby-red
color. As a result of aging in French Oak barrels, it has a complex
combination and an alluring bouquet with black fruits (blackberries,
blueberries and blackcurrant), toasted vanilla notes and a touch of
spices. Full bodied and harmonious on the palate, the rich fruit and toasty
oak provide a long, full finish.Suggested FoodsAs a wine of careful
selection, it is an excellent complement for a sophisticated cuisine
Vinification:
The hand-harvested fruit was gently pressed immediately on
arrival at the winery and only the juice was used for the blend. Cold
fermentation took place at 15-17 °C. The wine was fermented in
stainless-steel tanks and aged "sur lie" for 6 months to enhance the
distinctive fruit characterTasting NotesWell-integrated notes of vanilla
enhance blackberry, plum and dried fig aromas. Intense berry characters
combine on the palate with ripe tannins to create a delightfully smooth
texture.
